After moving to Spain, we were fortunate to meet Maria Maria joined us as our general manager and under her outstanding management, After moving to Spain, we were fortunate to meet Maria, who joined us at the very beginning—during the initial purchase and renovation phase. Maria, a young woman, also in her late 20s, with rich experience in restaurants and management, like us was ready to embark on the next challenge of her life. She was a driving force behind the birth of Os Faroles, leading the complex process of establishing the business from the ground up, from building the core team to the successful grand opening of the restaurant. Under her dedicated leadership, the new iteration of Os Faroles took shape.
In the spring of 2024, Mariona Gil took over the management of the restaurant and hotel, as Maria moved on to her independent path. Originally from Barcelona, Mariona is a dynamic young professional who arrived with extensive experience in the hospitality and restaurant industry. When you visit us, you will immediately understand why everyone falls in love with Mariona so quickly; she is exceptionally welcoming, service-oriented, and meticulous in everything she does. If you’re craving a great cocktail, Mariona is the person to ask, because among other things, she is a professional mixologist. Since 2025, she has been leading the entire business with a firm and professional hand—overseeing the vision and goals, the restaurant and kitchen staff, and the hotel operations as a whole. We couldn’t have asked for a better manager, and we are grateful that our paths crossed and that she has become the heart and soul of the Os Faroles family.
Our other team member, and perhaps the most significant one in the restaurant’s management team, is Pepe. This is our Dalmatian dog, who is actually the oldest resident of Os Faroles. The first time we met him he was locked inside the warehouse, scared and confused. We decided we wanted him too, and the previous owners were happy to give him to us. Little by little we fell in love with him and he with us, and today he’s an integral and essential part of the Os Faroles family. Thanks to him,
Os Faroles is an animal-friendly place, and when you arrive, you’ll see him walking around the restaurant and enjoying the guests who come and go.
